Edible Christmas Gifts: Festive Spiced Granola

Make something a little different this year, with this festive spiced granola! It's crunchy, chewy and packed full of nuts. spices, fruit and even some cheeky dark chocolate! The perfect festive breakfast treat!

Ingredients
  

  • 120 ml sunflower oil or vegetable/coconut oil
  • 120 ml maple syrup
  • 1 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 3/4 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 40 g hazelnuts
  • 40 g pistachios shelled
  • 240 g old-fashioned rolled oats
  • 60 g raisins or sultanas
  • 20 g glace cherries chopped
  • 40 g dark chocolate chips

Instructions
 

  • Firstly, pre-heat the oven to 150C/130C Fan/Gas Mark 2 and line a large lipped baking tray.
  • Place the oil, maple syrup, spices and salt into a large bowl and lightly whisk to combine. Then roughly chop the hazelnuts and pistachios and add to the bowl, along with the oats. Using a spatula, stir well to combine, ensuring all the oats & nuts are coated in the liquid. Then tip out onto the prepared tray, and spread out evenly. Then press the mixture down with your spatula to create a flat layer - this will help to create clusters.
  • Bake for 30 minutes, stirring halfway through. Making sure to re-press down the mixture, to help the clusters form.
  • The granola is ready when it's golden brown, the nuts are toasted and still seems a little wet. Remove from the oven, sprinkle over the raisins, chopped glace cherries and dark chocolate chips, and place onto a cooling rack to cool completely.
  • Once completely cool, give the granola a stir to combine the fruit and chocolate and then place into prepared air-tight jars or bags, ready to gift.

Notes

Granola will keep for up to one month, stored air-tight.
