Sassy Peanut Butter Biscuits

Packed full of peanut butter, these biscuits have a sharp snap and a sharp wit! Imprinted with sassy sayings, these biscuits will get everyone talking!

Ingredients
  

  • 200 g peanut butter smooth
  • 225 g unsalted butter
  • 200 g caster sugar
  • 200 g light brown sugar
  • 2 large eggs cold
  • 500 g plain flour
  • 1/2 tsp salt

Instructions
 

  • Using a hand-held electric whisk mix the peanut butter, butter and both sugars in a bowl on a low speed until incorporated. Then slowly add the eggs and mix until just combined.
  • Then add the flour to the mixture in a few batches, again on a low speed. Finally add the salt, and give a final mix until you have a dough that holds together.
  • Divide the dough in half to make it easier to work with, and roll out one half between two sheets of baking paper to about 1cm thick. The baking paper will make it easier to work with.
  • Then cut out as many biscuits as you can using your chosen cutter, and using the letterpress indent the shapes with your desired sayings.
  • Place the biscuits onto a baking tray covered in baking paper and put into the fridge for 30minutes to chill. They will feel firm to the touch once chilled. Whilst the biscuits are chilling, pre-heat your oven to 175C/Gas Mark 4.
  • Re-roll the remaining dough and repeat the process until you have all the biscuits in the fridge. Making sure to use the remaining half you had set aside.
  • Bake the biscuits in batches for 14 minutes in the oven. Leave to cool on the tray for a couple of minutes, before placing them on a cooling rack to cool completely.

Notes

Dough can be chilled in the fridge overnight before baking the next day. Biscuits will last for 2 weeks in an airtight container.
